Last week, in anticipation of International Scone Week, I made up and tried out this delicious spinach and feta scone recipe.
Ingredients
450 grams self-raising flour
100 grams cubed butter
225 grams crumbled feta cheese
5 ml ground black pepper
150 grams cooked and drained spinach, chopped
120 ml milk
120 ml water
Method
Preheat the oven to 220 degrees Celsius.
Boil the spinach in salted water and drain. Chop into small pieces. Sift the flour into a bowl and rub in the butter until it forms crumbs. Add the crumbed feta, the black pepper and the spinach. Mix. Add the milk and water and mix until a soft, sticky dough forms. Pat onto a floured surface until you have a round of doughy mixture about 1.5 cm thick. Cut into rounds using a cookie cutter. Place onto a prepared baking tray and brush with milk using a pastry brush. Bake for 15 minutes until the top is golden.
Serve with a little butter.

I arrived late to Feta…perhaps I didn’t love a greek salad for a long time, but once I realized what I was missing, I made up for it! I love the salty tartness of Feta, and have a large container in the refrigerator, the square block submerged for use whenever I have the urge…this recipe will be the next time I use it!

I would love to see what you produce, John. You are very good at cooking. I have always liked feta but it is a bit bland. The spinach and black pepper give it a bit of a kick.

Intersting, the Feta we buy here has a very peppery, tart edge to it…like a Zinfandel wine!

Delicious…I seem to have a block when making scones they never turn out like my mums …Pleased to see no baking powder mum would never use that…and hers rise perfectly mine just spread but I will keep trying 🙂 Love feta and spinach 🙂

Thanks, Carol. Have they always spread or is that in Thailand. The humidity impacts on how much raising agent you need for scones. In Thailand you probably need more and should add the baking powder (10ml).
