Today’s recipe was inspired by my good blogging friend, John Rieber. John really enjoys bacon and I love using bacon as an ingredient. I gave it some thought and these delicious avocado and bacon scones were born. Ingredients
450 grams self raising flour
1 large avocado
5 ml salt
5 ml freshly ground black pepper
1 egg
150 ml milk
1 250 gram packet bacon, diced and fried
Method
Preheat the oven to 220 C. Skin the avocado and de-pip. Chop the flesh into cubes. Sieve the flour and the salt into a mixing bowl.
Rub the avocado into the flour using your fingers until a crumb like mixture forms. Add the pepper and the fried bacon.
Crack the egg into the milk and beat lightly. Pour into the dry mixture and mix using a round bladed butter knife until a soft dough forms.
Place the dough onto a lightly floured surface and press with your hands until approximately 2 cm thick. Do not use a rolling pin.
Cut rounds from the dough with a cookie cutter and place on a greased baking tray.
Brush milk on the top of the scones using a pastry brush.
Bake for approximately 15 minutes until the scones have doubled in size and a cake tester comes out clean.
Delicious!
I love scones, but I don’t like the taste or texture of acocado pears. Maybe not for me, but shared on Twitter, Rbbie. 🙂

I think you’re right there, Robbie. My son-in-law grew up in Southern California, and avocado is a regular part of his diet.

When I think of scones, I usually think sweet. Like lemon scone with lemon frosting on top, or strawberry scone, or … you get the picture. But if I ate yours, I’d have dessert and breakfast down in one scone! 🙂

HI Michael, there are a lot of different scone recipes out there. The traditional plain or fruit scones are most well known though. Have a lovely weekend.

Thats wonderful. As they are online, i do not need to collect. Above all, I keep my mother from baking too much and gaining weight again. Lol

what an interesting set of ingredients for a scone, but it sounds quite tasty. as a vegan, I don’t eat bacon, but I can certainly remember how good it is!

A vegan is quite a strict eating regime, Jim. I take my hat off to you. I don’t eat that much meat but I do like bacon and use it quite often in cooking.

I’ve heard people call bacon the gateway drug for vegans. It has such a strong allure, and once you try it, it’s hard to go back to being a vegan…

I am curious about self-raising flour. When do you use that instead of regular flour?

Hi Elizabeth, I do sometimes use regular cake flour and baking powder, but for scones I always find that self raising flour makes them rise better.

what an interesting idea! In our season we have loads of avo’s and I’d never thought of scones … that’s definitely on my to do list! But no bacon for this lil veggo thanks 🙂
