Happy Holly Jolly Holidays to All!

I don’t know about you, but to me, it’s just not Christmas without a Christmas Cake. What’s that? You’ve no Christmas cake recipe to hand? Well, just so happens that Robbie Cheadle baker of all things delightful and delicious has come to save the day!

Christmas Cake Recipe

Decorated Christmas cake - Santa on the beachIngredients

250 grams currants
240 grams sultana
200 grams mixed berries
240 grams raisins
120 grams mixed peel
180 grams chopped cherries
300 grams cake flour
pinch salt
2.5 ml mixed spice
2.5 ml cinnamon
300 grams softened butter
300 grams sticky brown sugar
30 ml lemon zest
6 eggs, lightly beaten
45 ml brandy

Method

Preheat the oven to 140 degrees Celsius. Double line the cake tin with thick baking paper.

I have baked lots of cakes over the last few months.. and will be baking mince pies 🙂 for Christmas… And making a chocolate log instead… But as there will only be hubby and me eating them this Christmas… Lol…. I am will not be baking as much as I usually do when family come over.. Christmas here in the UK has been cancelled!.. by those dark forces running the show.. But they will not break the spirit of Christ… mas.. within the hearts of many.. ❤ 💛💚🧡 Much love dear Robbie have a lovely Christmas also my friend ❤

      2. I know that Christmas has been cancelled in the UK, Sue. Very sad, indeed. Our beaches have been closed and/or partially closed over the festive period which has spoiled the holidays for a lot of people.

  2. I can’t wait until my grand-daughter gets out of school for winter break. We love to bake together, so I’m thinking of cookies and a cake like your recipes. However, I’ll have to convert grams to American measures.

    1. I suppose so, Jim. Christmas cakes were a treat that families saved up to have for the entire year in the UK. During the war, my grandmother saved her coupons for the whole year for certain things so they could have a tiny Christmas cake and pudding.

      1. Of course! I’ve lived in the northern hemisphere my entire life. I grew up in a place where we always had a lot of snow and icy conditions during our winter.

    1. Whilst I’d hate to destroy such beauty, I believe I’d find it easier than most.

      “Out of sight out of mind, and into the tummy”

      LOL.

      Robbie is doing things I can only dream of. Someone suggested I buy cake pans in the shapes of the things I wanted to create, and I suppose that’s fine, but they still wouldn’t be like I wanted, so I just stick to eating them.

        I once did a cake shaped like a bear and I used dyed coconut for the fur and candies for the eyes nose and mouth.

        We did snowmen too.

  3. I helped a friend prepare Christmas Cakes and Christmas Puddings once, and it was a whole day affair, although it was fun! I’m not sure I’d dare without assistance, but yours looks (and I’m sure tastes) delicious. Thanks and Merry Christmas!
