Two birthdays

It has been a weekend of birthdays. I was supposed to post this yesterday, but the celebrations continued later than expected and I just ran out of time.

Today, my oldest son, Gregory, turns seventeen. Wow, I can’t believe it. He has an identity book and will be applying for a learner driver’s licence soon. Eeeek! I’m not ready for that!

I also had my birthday on Saturday. It is nice to be 38 [AGAIN!!!].

I spent the weekend making two cakes to mark these two events.

Gregory insisted on wanted a hummingbird cake. He asks for this cake every year and doesn’t want any decoration. No fondant, he cries says.

So here is the masterpiece. Hummingbird cake is made with crushed pineapple, mashed banana and chopped pecan nuts. The boys were not keen to help me by chopping the nuts, but I reminded them of the story of the Little Red Hen. Do you know that story?

I made a carrot cake for the office which I am taking today. I decorated it with two fondant lilies of the valley.

  1. That’s neat to have your birthday so close to your son’s. Seventeen is such an exciting time in a young man’s life. One of the perks about your son getting his license is he probably will be thrilled to run errands that you used to do.

  2. Yes, I know the story. I’m sure they were eager to help when they realized that was how things were going to work. 😉 I like the sound of both cakes, and bet everyone enjoyed their pieces. I wish you could arrange one of your visits to the UK so you can make me a birthday cake, especially since good cakes are harder to get without making them myself now I want vegan cake. Well, there are vegan cakes almost everywhere, but always chocolate, which I’m really not a fan of. I’d much rather a good lemon drizzle cake, or carrot cake, or something like that hummingbird cake.

    Anyway, happy birthday to both you and Greg!

    1. I am glad you know the story, Tori. They did come and help, dear chaps. This recipe contains egg and I don’t know what you use as a substitute for vegans. Interesting question I’ll have to research. I’ll be emailing you this week about the Treasuring Poetry feature.

      1. There are actual vegan egg replacers, but I personally never use them. With it having banana in, you might be able to get away with using nothing, since banana is one option used for an egg replacement by people who don’t want to buy those egg replacers. Otherwise apple cider vinegar or lemonade are popular. If it’s something spacifically requiring eggwhites, aquafaba (the water from canned chickpeas) is generally recommended, but I’ve not personally done anything with that yet… Checked out recipes from various sources that have though. To be honest, for cakes and biscuits where the recipe asks for a whole egg, I’ve had pretty successful baking experiments by simply leaving out the egg, even when bananas aren’t involved in the recipe.

      2. Thanks for the recipe link. Have grabbed it, and will have a go at veganizing it when I get a chance. If/when it works out, I’ll let you know. I don’t bake nearly as often as you though, so be patient, since it might take me a few weeks to get around to it.
